Twisted Espresso Tonic


700 g white sugar
350 ml boiled water
1 vanilla pod
100 ml white wine vinegar
1 shot of espresso
Fever Tree indian tonic

Homemade vanilla shrub
Makes approx 500 ml.
To make the simple syrup add 700 g white sugar to 350 ml boiled water. Cut a vanilla pod and add the scraped seeds to the syrup. Let the syrup cool down. When cool, add 100 ml white wine vinegar and stir to mix. Store your vanilla shrub in the fridge.


Mixing the drink
Pour your homemade vanilla shrub into a glass over ice and top with tonic, leaving space for one shot of espresso. Stir the tonic and shrub until mixed, be gentle you to keep as many bubbles as possible, top with an espresso shot and serve.
